A favorite vegetable dish in this house is "Italian Vegetable Stir Fry". The beauty of this dish is that it can be made with any number of vegetables. My favorite version though uses zuchinni (or other summer squash) as the primary ingredient.
Basic Recipe:
Clean and prep vegetables by removing ends and stems. Chop or slice all the vegetables to get them fairly uniform in size - and easy to handle on a fork. Heat oil in a wok or large pan and toss vegetables (except for the tomatoes) until somewhat browned and softened. Sprinkle with the italian herb seasoning. Toss the tomatoes into the pan and cook and stir until they collapse and create a juicy coating for the rest of the vegetables. Add salt to taste. The last step is to sprinkle with the freshly grated parmesan. Remove from heat and serve warm.
VARIATIONS - You can use different vegetables besides zuchinni (green beans, halved brussel sprouts, sliced green cabbage, what ever you like or a combination of things together!), If you do not have a fresh ripe tomato handy - a frozen whole tomato (from last year's garden) or a substitution of salsa can be made easily.
