Italian Bean Salad

A nice chilled salad that is a lovely side dish on warm summer days.   It makes a great appetizer when served with some crusty bread too.

Ingredients

  • 2 (15 ounce) cans cannellini beans, rinsed and drained (or 1 quart pressured canned white beans)
  • 1/3 cup chopped red pepper (or dried roasted red peppers in olive oil, drained)
  • 13 cup chopped sun-dried tomatoes in oil, drained
  • 1/3 cup sliced kalamata olives
  • 1/3 cup toasted pine nuts
  • 1/4 cup chopped red onion (or whatever fresh onion you have on hand)
  • 1/3 cup chopped fresh flat-leaf parsley
  • 1/4 cup chopped fresh basil
  • 1/2 cup garlic infused classic vinegarette dressing
  • red pepper flakes to taste
  • salt and ground pepper to taste

 Combined all ingredients in a serving bowl.  Season to taste.  Chill for 1 hour before serving.
