Judgment

This year’s preserving efforts had a few new recipes and a return of some old favorites.   I thought it might be fun to do a follow up to the previous posts and let you know what my judgment is on how several items turned out. 

 

In the totally new to me category there was pickled jalapeño peppers and spiced red cabbage relish.   We just opened the first jar of the pickled jalapeño peppers this evening and gave them a try.   Wow!   Those turned out very good.   I am glad I added the crushed red pepper flakes to the recipe because the peppers were not very hot this year and the red pepper flakes added a really nice heat.   This recipe (as modified by me) earns big thumbs up.   Unfortunately, I cannot say the same for the spiced red cabbage relish.   I opened the first jar of this several weeks ago and could not even finish the first spoonful.   Yuck.   This recipe earns a big thumbs down and I am going to have to just empty the remaining jars out before someone injures themselves trying to eat some of it.   Yikes!                      

                   

In the old favorites category we had dill pickle relish, pickled beets, and dilly green beans. True to form, these old standbys delivered to expectations.   I have to say though that I had forgotten how much I love dilly green beans. Once a jar is opened, it gets consumed almost immediately.   Nothing like a crisp croccantini flatbread cracker with a schmear of fromage blanc and then topped with a crisp dilly green bean. The spicy heat of the bean is complemented by the smooth creaminess of the cheese.  Heaven.           

    

 

 

So there you have it.   With the exception of the horrific spiced red cabbage relish, the rest of the specialty preserved items turned out wonderful.   If you used that spiced red cabbage relish recipe because I posted it…. you have my most sincere apology!

Don't you feel terrible when something you've spent so much time on turns out poorly? And even doubly so if you published the recipe, LOL! I was disappointed when I opened a jar of my pickled beets and found them to be rather soft, almost to the point of being mushy. They were the baby ones that I'd cooked with larger beets, and they were just plain overcooked. Edible, but not as good as nice, firm beets. I'm also not liking my extra-sweet bread and butter pickles quite so much now that they have been in the jars for a few weeks. I thought they were a lot better when I first made them (and I published the recipe). Everything else tastes just wonderful, so I'd say the canning season gets about a B+ at my house.

I've made lots of yucky things in the past. It breaks me heart too. It is so sad to waste all that wonderful food, not to mention my time. The problem with canning, is that we can't make a tiny little amount to try first.

Annie's Granny - I generally put a disclaimer on recipes if I have not personnally tested them yet (in fact I did just that with the pickled peppers recipe) but for some reason I did not do so with the spiced red cabbage relish. That was dumb on my part! With the pickled products you have to wait a while to really give them a proper taste test so the recipe may seem good at the time you do the canning - but then later you find out the truth!

hsheather - Definitely a risk in trying new canning recipes. Honestly, there has only been a few that were unmitigated disasters over the years (a saurkraut that did not cure properly comes immediately to mind!).

I did pickled peppers too,but only refrigerator pickles. I didn't can them. I've already eaten all the jalapenos and will start on the serranos. I LOVE them. I think I like them on my quesadillas better then the unpickled ones. Maybe next year I'll can some.

I remember making a spiced green hotdog relish last year, it was pretty bad so not much was eaten.This year I made Granny's sweet relish recipe and it was excellent. The cabbage relish might be good in a sour brauten or something similar. Your dilly beans look great. I have never tried them before.

Daphne - I was definitely paying attention to your refrigerator pickle process and thought it looked very intrigueing. The canned pickled peppers are a hit with my husband. and he almost inhaled the first jar of dilly green beans.

Dan - Maybe it is the concept of "spiced" and "relish" that should not be put together! LOL!

Grafix Muse - I will go check out the Honest Scrap award! I am so glad you choose to spend some of your time here and enjoy your site alot too.
