Harvest Monday - January 16, 2012

Each Monday, Daphne’s Dandelions hosts “Harvest Monday” where everyone submits links to their blog posts summarizing their harvest for the week.   It’s fun to see what people are producing from gardens from so many different regions, and how they are using it.   Check it out and join in too!                

  

It was another week of minimal fresh harvesting.   As always though, we use stored, frozen, and canned items a great deal in the preparation of our evening meals, but the fresh harvests are at their annual low point for the time being.   If you are interested in what was cooked and what garden produce was used (whether fresh, preserved, stored, or frozen), you can always find that information on the calendar page.   I always note the harvests, what was cooked for dinner, and what garden produce was used in the preparation of those meals.                                    

        

Sunday afternoon I harvested some fresh chard leaves just before the snow began to fall.                                               

      

  

 

This was used to make the Sunday evening meal of stir fried boneless/skinless chicken breast strips in a homemade Thai peanut sauce served on a bed of cooked (stir fried) swiss chard leaves.   Usually I use spinach for this recipe but swiss chard is a great substitute.   Hot cooked rice served as a side dish.   This is one of our favorite meals featuring spinach or swiss chard leaves.   I found this easy peanut sauce recipe on the internet some time ago and have made a few modifications to suit our tastes.                                                

 

Simple Thai Peanut Sauce

  • 1 13.5 ounce can of coconut cream (or coconut milk) 
  • 1/4 cup of Thai red curry paste
  • 3/4 cup of creamy natural style peanut butter
  • 1 teaspoon salt
  • 3/4 cup of sugar
  • 2 tablespoons of apple cider vinegar
  • 1/2 cup of water

Mix all the ingredients in a medium sauce pan and bring to a gentle boil over medium heat, stirring constantly.    Turn the heat down low and simmer the mixture for 3 to 4 minutes.    Be sure to stir frequently so that the sauce does not scorch.     Remove from heat - use immediately as a sauce for stir frys or allow to cool to room temperature if using as a dipping sauce.     This makes a fairly large batch, but the extra sauce keeps nicely in the fridge for several weeks or can even be frozen.

Laura love the peanut sauce. Am always looking for a different sauce for stir fry. I have copied it. Will need to see if I can find the curry paste. It is difficult to get anything like that around here.

I really enjoy your Calendar idea! Good stuff. Something geeky about being able to cross reference your data to see just how good you really believe you are... or.... to verify that you aren't all that bad after all. How ever you wish to view it. :)

wilderness - It really is a good recipe but I wish the coconut cream was sold in smaller cans so I could half the recipe as it makes alot and I usually end up having to freeze the extra because it is just too much sauce for us to use in a few weeks time.

the-stay-at-home-gardener - I must admit to it, I am a geek! :D

I might have to get into our Swiss chard and try this recipe next week. We don't have a big crop of chard this year and I have been saving it. I may have to cut some so we can give this one a try.

Have you tried making half the recipe and freezing the extra coconut cream instead?

I'm a huge fan of satay sauce. The version I make I found in an old Indonesian cookbook (I suspect its the Indonesian version of a CWA (Country Womens Association) cookbook. Anyway its really easy and yummy. It has onion, garlic, ginger which you fry til brown then add soy sauce, peanut butter, coconut milk and a souring agent - I use either tamarind or lemon juice depending which I have. Great on steam veg with rice.

That sounds good, I love a nice peanut sauce. We ad a cold snap so I'm done harvesting for the winter. I've got my leeks protected and I am hoping I'll have some sweet ones in the spring, but in the meantime I am envious of your more temperate clime....

Though I'm not a fan of peanut sauces, I do love my chard. Now I just have it from the freezer though.

Rick - Even better with spinach!

Norma Chang - No I have not tried that. I don't use coconut cream for much else so it probably is the same one way or another.

Liz - That recipe sounds yummy too.

Ali - Not so temperate today - have quite a bit of snow falling at the moment and it is 28 degrees. We do get winter it is just brief and not too harsh!

Daphne - I have some freezer supplies as well that we have slowly been using up. It's nice to add a fresh harvest to the frozen, stored, and preserved items though.

Barbie - Peanut sauces are rich so a little goes a long way - even for those that like it!

2 pounds for the year is a great start! We heard about the snow out there. Belle is coming to Auburn next week. We're hoping the weather will be a little better for her visit with family. I'll stay home with the boys this time. Oh boy!
